We had a really enjoyable weekend at Deep Creek and celebrated the Fourth with Grandad and Grandma. Josh got to ride on the mower and forklift and even steered! We had a great dinner and sang Happy Birthday to Grandad. Around dusk, we watched fireworks - Grandad's backyard display and the fireworks from various towns over the tree line. Grandad's Show was really awesome and even though Josh was nervous during, he asked, "Please" when it was over hoping for more! Thank you for the great celebration!

Chocolate Caramel Oatmeal Chews
2 cups of Quick or Old Fashion Oats
1 3/4 cups of Flour, divided
3/4 cup packed brown sugar
1 tsp baking soda
1 cup butter or margarine, melted
1 cup Butterscotch caramel ice cream topping ( I couldn't find this so I just used Caramel. My sister inlaw used just butterscotch. They both worked really well)
1/2 cup chopped pecans (2oz if you buy them already chopped)
1 cup semi-sweet chocolate morsels
1. Preheat Oven to 350. Spray 13 x 9 in pan. Combine Oats, 1 1/2 cups of the flour, brown sugar and baking soda. Add Butter; mix until crumbly. Reserve 1 cup of the crumb mixture. Press the remaining crumb mixture on to bottom of pan with fingers. Bake 15 minutes
2. Combine Caramel topping and 1/4 cup of remaining flour; whisk until smooth. Drizzle over crust; carefully spread to edges
3. Combine pecans, reserve crumb mixture. Sprinkle crumb mixture and chocolate morsels over caramel mixture. Bake 15-18 mins or until golden brown and bubbly. Remove to cooling rack. Cool completely and cut into bars.
Okay- so the 1st time I made this I was in a HUGE hurry so I had to serve them Hot and they were melting in peoples hands and were super gooey and SO good. The 2nd time I made them I let them cool and cut them into squares, they were good, but not AS good. They are SOOOOO rich that they just taste more awesome when they are hot and crumbly.
